I assume I can just plug camera into new router with Ethernet and easily change my wifi connection and keep all camera settings?

It should work this way most of the times but in some situations you may have to do a hard reset on the camera and start over again. For resetting, you need to press and hold the indicator light on the back of the camera for 10 seconds.
