I'm thinking about buying a NVR and using a 64GB USB stick for storage. When the 64 GB is filled up does the NVR simply over write the data?

The USB stick can be used to copy the files from the NVR but it will not record directly to the external USB drive. You can install a 1 or 2 TB hard drive (supports up to 4TB) internally to record cameras. 64 GB is very less space if you are using full time recording.
